- 2.5 g (0.5 tsp) vegetable shortening or unrefined coconut oil
- Zest of 1 medium lemon, finely grated
- 2.5 mL (0.5 tsp) food-grade rose water
- Fresh lemon zest (for garnish)
- 1 g (0.25 tsp) edible dried rose petals, finely crushed (for garnish)
Instructions
- Clean and Dry Strawberries: Thoroughly wash strawberries under cool running water. Gently pat each berry completely dry using paper towels. Line a baking sheet with parchment paper.
- Melt Dark Chocolate: Place chopped dark chocolate and 5 g (1 tsp) shortening or coconut oil in a heatproof bowl. Melt using a double boiler (over simmering water) or in a microwave in 30-second intervals until smooth and glossy.
- Dip and Coat Berries: Holding each strawberry by its stem, dip into the melted dark chocolate, rotating to coat about two-thirds of the berry. Lift and gently tap wrist against the bowl’s rim to allow excess chocolate to drip off. Place dipped strawberry onto the parchment-lined baking sheet.
- Chill Dark Chocolate: Once all strawberries are dipped, place the baking sheet in the refrigerator for 10-15 minutes to allow the dark chocolate layer to set firm.
- Prepare Drizzle: While the dark chocolate sets, place chopped white chocolate and 2.5 g (0.5 tsp) shortening or coconut oil in a separate clean heatproof bowl. Melt using the same double boiler or microwave method as the dark chocolate until smooth and fluid. Stir in the finely grated lemon zest and rose water.
- Drizzle and Decorate: Remove chilled strawberries from the refrigerator. Using a spoon or a small piping bag, drizzle the lemon-rose white chocolate mixture over the dark chocolate-coated strawberries, creating an attractive pattern.
- Final Set: Return the baking sheet to the refrigerator for another 20-30 minutes, or until both chocolate layers are completely set and firm to the touch.
