  • Additional filtered water, for daily feedings

Instructions

  1. Initial Mix: In a clean 500 ml glass jar, combine 50g gluten-free flour blend, 50g water, 1g turmeric, and 1g lemon zest. Stir with a spoon until a thick, smooth paste forms. Cover loosely and place in a warm spot (22-26 C / 72-78 F) for 24 hours.
  2. First Feeding: After 24 hours, remove and discard about half (approx. 50g) of the starter. Add 50g fresh gluten-free flour and 50g water to the remaining starter. Stir vigorously until smooth, re-incorporating golden color and scraping down the sides. Cover loosely for another 24 hours.
  3. Daily Feedings: For Days 3-7 (and beyond), repeat the daily feeding process: discard half of the starter, then feed with 50g gluten-free flour and 50g water. Stir well until it reaches a thick pancake batter consistency (add 1-2 Tbsp water if too dry). Expect a pleasant tangy aroma and increasing bubbles within 4-8 hours.
  4. Ready Starter: Your gluten-free sourdough starter is active when it reliably doubles in size within 4-8 hours after feeding, showing a bubbly, web-like structure. It should rise and fall, and have a vibrant golden hue with lemon flecks.

Notes

Maintaining a consistent warm temperature (72-78 F or 22-26 C) is crucial for the microbes. Use fresh, organic flours for best results. If you do not have filtered water, let tap water sit out overnight.
