Instructions
- Activate Yeast: Combine 0.5 cup (120 ml) warm whole milk (105-115F / 40-46C), 1 teaspoon granulated sugar, and 2.25 teaspoons (7 g) active dry yeast in a small bowl. Let it sit for 5 minutes until it appears foamy.
- Mix And Knead Dough: In a large mixing bowl, combine 2.5 cups (300 g) all-purpose flour and 1 teaspoon salt. Pour in the activated yeast mixture, 2 tablespoons (28 g) melted unsalted butter, and 1 large egg. Knead for 8-10 minutes by hand or 5-7 minutes with a stand mixer(s dough hook) until smooth and elastic.
- First Rise: Lightly grease a clean bowl with oil. Place the kneaded dough inside, turn once to coat, then cover with plastic wrap. Let it rise in a warm spot for 60-90 minutes until it has visibly doubled in size.
- Shape Buns: Gently punch down the risen dough to deflate it. Divide the dough into 8 equal pieces (about 85 g each). Roll each piece into a smooth, tight ball.
- Second Rise: Arrange the shaped dough balls on a baking sheet lined with parchment paper, leaving about 2 in (5 cm) between them. Cover lightly and let them rise again for 45-60 minutes until noticeably puffy and soft to the touch.
- Apply Egg Wash And Top: In a small bowl, whisk 1 large egg with 1 tablespoon water for a glossy egg wash. Gently brush this mixture over the top of each bun and sprinkle generously with sesame seeds.
