Ingredients
- 1.5 cups crushed graham crackers
- 0.5 cup unsalted butter, melted
- 0.25 cup granulated sugar (for crust)
- 2 (8 oz) blocks full-fat cream cheese, softened
- 1 cup granulated sugar (for filling)
- 2 large eggs
- 1 tsp vanilla extract
- 0.25 cup sour cream (or Greek yogurt)
- 1 cup fresh or frozen strawberries, hulled
- 2 tbsp granulated sugar (for swirl)
- 1 tsp lemon juice
Instructions
- Preheat Oven and Prepare Pan: Preheat oven to 350 F (175 C). Lightly grease an 8×8 inch baking pan.
- Prepare Crust: In a bowl, combine crushed graham crackers, 0.5 cup melted butter, and 0.25 cup sugar. Press firmly into the bottom of the prepared pan. Bake for 8-10 minutes until lightly golden. Let cool completely on a wire rack.
- Make Strawberry Swirl: In a small saucepan, combine strawberries, 2 tbsp sugar, and lemon juice. Simmer over medium heat for 5-7 minutes, mashing berries, until thickened. Let cool slightly, then strain for a smoother sauce if desired.
- Prepare Filling: In a large bowl, beat softened cream cheese and 1 cup sugar until smooth and creamy (about 3-4 minutes). Beat in eggs one at a time until just combined, then vanilla and sour cream, mixing gently until smooth.
- Assemble and Swirl: Pour cream cheese mixture over the cooled crust. Dollop spoonfuls of strawberry sauce over the top. Use a knife or skewer to gently swirl the strawberry into the cheesecake for a marbled effect.
- Bake Cheesecake: Bake for 35-40 minutes, until the edges are set and the center is slightly jiggly. (Avoid overbaking; if the center looks very liquid, bake for another 5 minutes).
