Instructions
- Prepare Lamb: Pat lamb chops thoroughly dry with paper towels; season generously all over with salt and freshly ground black pepper until evenly coated.
- Preheat Grill: Prepare your outdoor grill or a heavy-duty grill pan for medium-high heat, aiming for about 400-450ยฐF (200-230ยฐC).
- Grill Chops & Herbs: Brush the lamb chops lightly with olive oil. Place them on the hot grill and grill for 3-5 minutes per side for medium-rare (internal temperature 130-135ยฐF / 54-57ยฐC), until they develop beautifully charred grill marks. Grill a few extra sprigs of herbs directly on the grates for just 1-2 minutes until slightly wilted and smoky. (For thinner chops, reduce grilling time by 1-2 minutes per side.)
- Rest the Lamb: Remove the grilled lamb chops from the heat and tent them loosely with aluminum foil on a clean cutting board. Let them rest for 5-10 minutes.
- Finish & Serve: Roughly chop the grilled herbs and the remaining fresh herbs. In a small bowl, combine them with a drizzle of olive oil, the fresh lemon zest, and a squeeze of lemon juice, mixing until the Charred Herb Green is vibrant and fragrant. Serve this bright mixture immediately over the rested grilled lamb chops for a fresh, zesty finish.
