Ingredients
- 8 (8-inch) flour or corn tortillas (use corn for a gluten-free option)
- 1 lb (450 g) lean ground beef, browned
- 2 tbsp (30 ml) taco seasoning, store-bought or homemade mix
- 1 can (15 oz/425 g) vegetarian refried beans, warmed (low-sodium brand preferred)
- 0.5 cup (120 g) diced ripe tomatoes, for Fire Salsa (fresh, or canned diced tomatoes drained well)
- 0.25 cup (60 g) diced yellow onion, for Fire Salsa (or red onion for a sharper bite)
- 1–2 fresh jalapeños, finely chopped, for Fire Salsa (seeds removed for less heat, or left in for extra kick)
- 1 tbsp (15 ml) fresh lime juice, for Fire Salsa
- Pinch of salt, for Fire Salsa
- 1 cup (112 g) shredded cheddar or Mexican blend cheese (a sharp cheddar offers richer flavor)
- 0.5 cup (60 g) diced tomatoes, for topping
- 0.25 cup (20 g) sliced green onions, for topping
- 0.5 inch (1.2 cm) neutral oil, for frying tortillas
Instructions
- Preheat Oven And Prepare Salsa: Preheat oven to 400°F (200°C). In a small bowl, combine the 0.5 cup diced ripe tomatoes, 0.25 cup diced yellow onion, 1-2 finely chopped jalapeños, 1 tbsp fresh lime juice, and a pinch of salt to create the Fire Salsa.
- Fry Tortillas: Heat 0.5 inch of neutral oil in a 10-inch skillet over medium-high heat until shimmering. Fry tortillas one at a time for 30-60 seconds per side until lightly golden and crisp, then drain on paper towels. Ensure they are very crisp to avoid sogginess.
- Cook Seasoned Beef: Brown 1 lb ground beef in a large skillet over medium heat, breaking it up until no pink remains. Drain any excess fat thoroughly. Stir in taco seasoning according to package directions, then keep the seasoned beef warm.
- Assemble Pizzas: Place 4 fried tortillas on a baking sheet. Spread a thin, even layer of warmed refried beans on each. Top with a spoonful of seasoned ground beef. Place another crisp fried tortilla on top of the beef layer. Spread a generous layer of the prepared Fire Salsa over the top tortilla. Sprinkle evenly with shredded cheese.
- Bake And Serve: Bake the assembled pizzas in the preheated oven at 400°F (200°C) for 5-8 minutes, or until the cheese is melted and bubbly with slightly crisp edges. Remove from oven, top with 0.5 cup diced tomatoes and 0.25 cup sliced green onions, and serve immediately.
Notes
Ensure tortillas are fried until very crisp before assembling to avoid sogginess. Do not overload with too much sauce or liquid. For a bolder flavor, add an extra jalapeño (with seeds) or a dash of your favorite hot sauce to the Fire Salsa. Use an air fryer for crisping tortillas (350°F (175°C) for 2-3 minutes per side) or an Instant Pot for cooking ground beef as shortcuts.
