Description

This recipe features a triumphant fried ice cream with a golden, crunchy cinnamon sugar crust and a perfectly frozen, creamy vanilla center. It’s an impressive yet simple dessert, perfect for family dinners or special treats.

Ingredients

Scale
  • 1.5 quarts vanilla ice cream, high-quality
  • 4 cups corn flakes, finely crushed
  • 0.5 cup granulated sugar
  • 2 tablespoons ground cinnamon
  • 46 cups vegetable, canola, or peanut oil
  • Optional Garnish: honey, whipped cream, chocolate syrup, fresh fruit (berries, sliced banana), cherries

Instructions

  1. Prepare Ice Cream Balls: Scoop 8-10 uniform balls onto a parchment-lined baking sheet. Freeze 2-3 hours until very firm.
  2. Create Cinnamon Sugar Crust: In a wide dish, combine 4 cups crushed corn flakes, 0.5 cup granulated sugar, 2 tablespoons ground cinnamon. Mix thoroughly until evenly distributed.
  3. First Coat Ice Cream: Work quickly. Roll each frozen ball firmly in the crust until fully coated. Press crumbs to adhere. If the ice cream melts too fast during coating, return it to the freezer immediately for 15 minutes before continuing.
  4. Second Freeze Balls: Place coated balls back on the baking sheet; freeze 30-60 minutes.
  5. Heat Frying Oil: In a 10-inch Dutch oven, pour 4-6 cups vegetable, canola, or peanut oil. Heat to 350-375ยฐF (175-190ยฐC) using a candy thermometer.
  6. Fry Ice Cream Balls: Lower 1-2 balls into hot oil. Fry 20-40 seconds, turning once, until golden and crispy. Do not overfry; the inside should remain frozen.
  7. Drain and Serve: Remove fried ice cream with a slotted spoon. Place on a paper towel-lined plate to drain. Serve hot with toppings for an incredible treat.

Notes

Ensure ice cream balls are rock-solid firm before coating and frying to prevent melting. If ice cream melts during coating, refreeze immediately for 15 minutes. Use fresh, high-quality oil for high-heat frying. Watch for a golden-amber color when frying, and do not overfry to keep the inside frozen.
