Ingredients

  • 1 medium diced green apple (about 6 oz / 170g), optional
  • 2 tablespoons maple syrup (30ml) (or honey)
  • 2 tablespoons apple cider vinegar (30ml)
  • 1 teaspoon Dijon mustard (5ml)
  • 3 tablespoons olive oil (45ml)
  • A pinch salt, to taste
  • A pinch pepper, to taste

Instructions

  1. Prep the Kale: Wash two bunches of kale thoroughly under cool water until clean. Dry the kale completely using a salad spinner or paper towels. Remove the tough stems, then finely chop the leaves into bite-sized pieces. Lightly massage the chopped kale in a large mixing bowl with about 0.5 teaspoon of olive oil for 1-2 minutes until it softens and brightens.
  2. Prepare Fruit and Nuts: Slice fresh strawberries into even pieces. Roughly chop the pecans. If using, dice the green apple into small, uniform cubes.
  3. Make the Dressing: In a small bowl, whisk together 2 tablespoons of maple syrup, 2 tablespoons of apple cider vinegar, 1 teaspoon of Dijon mustard, 3 tablespoons of olive oil, and a pinch of salt and pepper. Whisk vigorously for about 30 seconds until the mixture emulsifies and looks slightly thickened and uniform.
  4. Combine and Serve: In a large mixing bowl, combine the prepared kale, sliced strawberries, chopped pecans, and diced apples (if using). Pour the dressing evenly over all the ingredients. Toss gently using salad tongs until every piece is well coated and glossy. Serve immediately.
