Ingredients
- 1.5 cups long-grain rice
- 1 large ripe tomato, diced (or 1 can 15 oz diced tomatoes, undrained)
- 3 cups chicken or vegetable broth
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 0.25 tsp saffron threads, lightly crushed
- 1 tsp smoked paprika
Instructions
- Sautรฉ Aromatics: Heat olive oil in a large oven-safe skillet over medium heat. Add onion, bell pepper, and garlic. Cook 5-7 minutes until softened and fragrant.
- Build Flavor Base: Stir in rice, smoked paprika, and saffron. Toast 2-3 minutes until rice looks translucent and aromatic.
- Add Liquids & Simmer: Pour in diced tomatoes and broth. Bring to a gentle simmer, stirring once to combine.
