Ingredients

  • 4 cloves garlic, minced
  • 100 g grated cheddar cheese (halal certified)
  • 100 g cream cheese, softened (halal certified)
  • 50 g sun-dried tomatoes, chopped
  • 2 tbsp fresh basil, chopped
  • 100 g breadcrumbs
  • 1 large egg
  • 60 ml whole milk
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp smoked paprika
  • 2 tbsp olive oil (plus 1 tbsp for glaze)
  • 2 cloves garlic, grated (for glaze)
  • 30 g toasted breadcrumbs with garlic & olive oil
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat & Prep: Preheat oven to 190ยฐC (375ยฐF) and line a baking sheet with parchment paper.
  2. Combine Chicken: Gently mix chicken, garlic, cheese, breadcrumbs, egg, milk, salt, pepper, and paprika.
  3. Make Tomato Swirl: Blend cream cheese, sun-dried tomatoes, and basil; season lightly.
  4. Assemble Meatloaf: Spread chicken mixture, add tomato swirl, and fold to enclose.
  5. Initial Bake: Bake for 35 minutes, brushing with 1 tbsp olive oil.
  6. Prepare Glaze: Combine remaining olive oil, grated garlic, and paprika.
  7. Glaze & Finish: Brush with glaze and bake 10-12 minutes until cooked through.
  8. Toast Breadcrumbs: Toast breadcrumb mixture until golden brown.
  9. Rest & Slice: Rest for 10 minutes before slicing.
