Description

- 300g (10.5oz) cherries, pitted
- 250ml (1 cup) water
- 100g (1/2 cup) granulated sugar
- 0.5 tsp & 1/4 tsp sea salt
- 2 tbsp & 250ml (1 cup) heavy cream
- 2 tsp vanilla extract
- 30g (2 tbsp) powdered sugar
- 100g (3.5oz) 70% dark chocolate, chopped
- 150ml (2/3 cup) milk
- 30g (2 tbsp) melted butter
- 1 tbsp cornstarch dissolved in 2 tbsp water
- 50g (1/2 cup) toasted hazelnut shards
Instructions
- Prepare Cake Base: Distribute cubed cake evenly in a trifle bowl.
- Add Mousse Layer: Spoon chilled chocolate mousse over the cake.
- Top with Cream: Add a layer of whipped cream.
- Drizzle Compote: Drizzle salted caramel cherry compote over the cream.
- Repeat Layers: Layer cake, mousse, cream, and compote until full.
- Final Flourish: Swirl compote on top.
- Garnish & Chill: Sprinkle with hazelnuts and chill for at least 2 hours.
